We were really excited to try Charcutnuvo for a lot of reasons. First, everything on the website seemed so unique and tasty. You can’t find sausages in such unique flavors in the grocery store!

The history behind Charcutnuvo is also fascinating. It is family-owned and based out of Denver, Colorado. All of the sausages are made in one facility. This helps ensure the product is of the highest quality as each sausage can is made and packaged under one roof.
They have a great motto that says that the only way to guarantee great sausage is to make it themselves. No outside manufacturers here!
Charcutnuvo even offers tours of their sausage-making kitchen so that customers can see firsthand how clean and meticulous the process is.
Of course, we were excited to give Charcutnuvo a try when we read all about the meats that are used to make the sausage. All of the meat is raised in the USA (with the exception of Bison and Elk) and much of it is certified organic.
Everything comes from small farms where the animals are ethically raised with no added hormones or antibiotics. I love that you can feel good about eating Charcutnuvo sausage knowing that they are committed to ranchers who support regenerative agriculture.
For these Charcutnuvo reviews, we received Organic Beef & Pork Jalapeno Cheddar Bratwurst, Organic Smoked Andouille Sausage made with beef, and Wild Game Uncured Bison Weiners.
The three packs of sausage were packed in a huge box filled with insulation, large ice packs, and also bags that indicated dry ice had also been in the bag (but had evaporated). There was a smaller box inside that contained the sausage.
There were no other packets, papers, or extras in the box. All of the sausages were completely frozen and solid meaning it made the trip across the country (Colorado to New York) intact. SHOP NOW >>
The beef and pork jalapeno bratwurst is made using beef and pork raised in the United States. It is all grass-fed beef and also USDA organic. The bratwurst is non-GMO, Gluten-Free has no nitrites or nitrates, and also no added sugars.
The bratwurst in the package is fully cooked and can be eaten right out of the package, however, there are suggested cooking directions on the back of the package. There were 4 bratwursts in the pack and all were frozen upon arrival. I thawed them at room temperature for about 3 hours before cooking.
To heat up the bratwurst, I followed the directions on the back of the package to cook them in the microwave. It was recommended to wrap the bratwurst in a paper towel and microwave at half heat for 90 seconds. I followed these simple instructions and then ate the bratwurst on a white bread bun, keeping it nice and basic so I could really taste the meat. SHOP NOW >>
The bratwurst had a great flavor. It was spicy and also cheesy. The blend of flavors was perfect. I am not a huge fan of spicy foods but this was not over-the-top heat. The creamy cheese balanced out the heat well.
The meat was a little chewy because of the outside skin of the bratwurst. It was a little dry but I think this was because of the microwave method of cooking. Next time, I would take the time to either steam the bratwurst or pan sear them rather than cook in the microwave. Definitely flavorful and an easy way to have a quick, healthy, protein-packed meal.

Charcutnuvo Reviews: Uncured Bison Wieners
The Uncured Bison Wieners are made with grass-fed U.S. and Canadian bison. The bison are hormone and antibiotic-free. The wieners contain no dairy, sugar, or gluten as well as being free from nitrites and nitrates. were also fully cooked and could be eaten right away. Once again, 4 in a package, and they were frozen upon arrival.
This time, I chose to cook them in a frying pan as directed on the back of the package. I seared the wieners in a little bit of oil for 2 minutes, flipped them, and cooked for another two minutes. To keep it simple, I served the bison wieners on a plain hot dog bun in order to really taste the meat.
The bison was pretty flavorful and definitely way better than a typical hot dog. They were a little peppery and also had a subtle smokey taste. They were much chewier and tougher than a traditional hot dog but also probably 4 times larger than any grocery store wiener.
When cooked in the saute pan, the skin bubbled and got a nice crispy texture. I could definitely see enjoying these wieners sliced and served with some cheese and crackers. Not only did I love the flavor but my kids found them to be very tasty too- perfect for adults and kids! SHOP NOW >>

Charcutnuvo Reviews: Paleo Beef Andouille
The Paleo Beef Andouille is made with 100% grass-fed beef. Like most andouille sausages, it has spices added in to give it some heat. The sausage is USDA certified organic, non-GMO, gluten-free, and has no sugar added. It is also perfect for those on the Paleo diet which required you to only eat food that was available millions of years ago. This sausage has no additives or strange ingredients. Everything is pure, natural, and could have been something a caveman would eat- Paleo approved!
To make the andouille sausage, I defrosted it, sliced it thinly, and then cooked it into a risotto. I kept the seasoning in the risotto to a minimum and added the sausage early in the recipe to allow the spices in the meat to permeate through the rice.
The sausage definitely had quite the kick to it. With just one bite, the heat of the sausage wasn’t noticeable but after two or three pieces, the cayenne pepper and red pepper flakes certainly brought an intense spice. However, the creamy, cheesy risotto helped subdue the heat nicely and the dish was very well balanced. SHOP NOW >>
I found the andouille sausage to be very tender, incredibly flavorful, and easy to prepare. Since the sausage arrives fully cooked and smoked, all you need to do is heat it back up!
I would definitely recommend this sausage and buy it again. For $9.99 you receive four very flavorful sausages that are a great addition to any meal. I think cooking it with other ingredients worked well rather than eating it alone.
However, if you like a lot of spice, eat this sausage plain and you will not be disappointed! Andouille sausage is a common ingredient in Creole dishes and the Charcutnuvo sausage would be perfect for this, too. SHOP NOW >>
